Pepitoria Chicken

Another Grandma recipe,it was originally made with hen, though it is very difficult to find nowadays. Pepitoria relates the sauce which goes with the chicken and you can cook it with differents proteins, usually game birds.
Ingredients for 4 people:
-1 Chopped Chicken or Hen.
-1 Big Onion.
-2 Garlic Cloves.
-100 Gr. of Almonds.
-3 Boiled Eggs.
-1 Cup of White Wine.
-1 Cup of Chicken Broth.
-Saffron Threads.
-Spanish Olive Oil.
-Salt.
-Pepper.
-1 Bay Leaf.
-Parsley.





Season the chopped chicken with salt and pepper and brown them in a deep pan with 3 or 4 tablespoons of olive oil. When the chicken is fried set aside over paper towels.
In a pot with the same oil poach the diced onion. Let the onion get soft and meanwhile in a mortar place the garlic cloves, the almonds, the eggs yolks, the saffron threads (previously slightly toasted in a pan to obtain more color and flavor) and a little bit of parsley and salt. Mash all of them until it forms a paste.
Put the chicken in the pot and add the bay leaf and the cup of white wine, let the wine reduce. When the alcohol is gone add the chicken broth and the mix from the mortar.

Let the stew cook for 20 minutes until the chicken is tender and decorate with the chopped white eggs. YUUUUMMYY!!!
