Cod Fritters (Buñuelos de Bacalao)


Another typical Spanish Easter recipe, in this case I made them with cod but there are multiples ways to make them, they could be sweet as well as salty.
Ingredients for 4 people:
-150 Gr. (5 Oz.) Fresh Cod.
-1 Scallions.
-1-2 Garlic Cloves.
-100 Gr. (3.50 Oz.) Flour.
-1 Eggs.
-1 Teaspoons Baking Powder.
-100 Ml. (3.40 Oz.) of Water (could be substitute for milk)
-Spanish Virgin Olive Oil.
-Fresh Parsley.
-Salt.




In Spain, this recipe use to be done with salty cod, so you would need to desalt it, but in this case the fritters are done with fresh cod.
Start mincing the scallions and the garlic cloves and poach them in a pan with a little of olive oil at low heat, when the veggies are almost done add the shredded cod and poach lightly. Let them drain over paper towel.
Make the dough in a bowl placing the beaten egg, the water (or milk), add little by little the flour already mix with the baking powder and salt when all these ingredients come together mix in the poached veggies and the cod previously drained . The dough has to be light and creamy.

Finally in a deep pan with plenty of olive oil place dough tablespoons and fried them until are brown. Remove the excess oil putting them over paper towel and decorate with grounded parsley.
